Head of Bakery

Job Responsibilities

• Oversee and coordinate daily production operations to achieve production targets, delivery timelines, and quality requirements.
• Develop and manage production schedules while optimizing workforce deployment to accommodate business needs and seasonal fluctuations.
• Establish, enforce, and enhance Standard Operating Procedures (SOPs) covering food safety, hygiene, quality control, and operational effectiveness.
• Ensure products consistently meet quality and compliance standards, and drive corrective actions to address and prevent recurring issues.
• Supervise, mentor, and assess production personnel, providing guidance, training, and performance development support.
• Monitor and control production costs through waste reduction initiatives and productivity improvements while maintaining product standards.
• Anticipate operational challenges, identify process bottlenecks, and implement corrective and preventive solutions.
• Collaborate on new product development, including product testing, launches, and seasonal offerings.
• Prepare and present production reports, highlighting operational performance, key risks, and continuous improvement initiatives.
• Support internal and external audits, inspections, and certification processes while ensuring ongoing compliance and audit readiness.

Job Requirements

• Diploma or Degree in Culinary Arts, Pastry Arts or a related field.
• At least 5 years of experience in bakery production, pastry manufacturing, or food production environments.
• Proven expertise in large-scale production of bread, pastries, cakes, and other baked goods.
• Familiarity with food safety, quality assurance, and workplace safety standards, including HACCP and applicable regulatory requirements.
• Willingness and ability to travel as required.
