SOUS CHEF

Are you a passionate and experienced chef ready to take the next step in your culinary career?Xara Collection is looking for a motivated and talented Sous Chef to join the team at Xara Lodge and support our Xara Catering operations.Set in the countryside beneath Mdina, Xara Lodge hosts weddings, banquets, corporate functions and special events, while Xara Catering delivers exceptional culinary experiences both on-site and at external venues.Your responsibilities will include:Supporting the Executive Chef and Head Chef in overseeing daily kitchen operations, ensuring efficient workflow, proper organisation and consistent standards.Planning and coordinating food preparation, mise-en-place, production schedules and service requirements for weddings, banquets, corporate functions and other events of varying sizes, both on-site and at external venues.Supervising, motivating and training kitchen team members and ensuring the team works efficiently to meet event schedules and service expectations.Ensuring consistency in food quality, presentation, portioning and service standards.Assisting with stock control, inventory checks and monitoring food costs, portion control and wastage to support efficient kitchen operations.Ensuring compliance with food safety, hygiene, HACCP, allergen management and health and safety procedures.Working closely with the kitchen and service teams to coordinate event requirements, manage changing priorities and ensure the smooth delivery of every function, both at Xara Lodge and at external catering locations.
